Faux-gurt Covered Blueberries


My first recipe post!  I wouldn't be so excited if it didn't feel like such a huge accomplishment.  I am notorious for making food stuffs up on the fly without any rhyme or reason (or repeatability).  My friends eat my food and then spend the remainder of their time on this Earth begging me to give them a recipe.  They don't really like it when I tell them to just throw a little of this and a little of that in a pan.  I am bound and determined to keep better track of what I cook and how I cook it... and then share it with the world.

Okay, on to the recipe!  I have seen this all over Pinterest lately; yogurt covered blueberries.  Man, oh man, they look wonderfully delicious.  But, they are made with yogurt.  In a past life... actually, just a few months ago... I would have been all over that like white on... well, yogurt.  Alas, I can no longer consume dairy products (more on that later).  So, I decided to Paleo-ize that shit.  This is what I came up with.


Faux-gurt Covered Blueberries



Ingredients:
Blueberries
1 C. Coconut Milk
1/2 C. Virgin Coconut Oil
1/4 C. Maple Syrup or Honey or Whatever
1 C. Shredded Coconut
1 tsp. Vanilla Extract


Combine coconut milk, coconut oil, and maple syrup. Depending on the temperature, you may have to heat up the oil and/or milk to liquify them. Add the shredded coconut. Allow to cool enough to thicken slightly. Again, depending on the temperature, you may have to put the coconut mixture in the fridge for a bit to accomplish this; it should be the consistency of thin oatmeal. Then comes the time consuming part, dunk your blueberries in the coconut mixture and place on a parchment paper or wax paper lined cookie sheet. I found that toothpicks work really well for this; stab a berry, dunk/scoop in the goop, push onto cookie sheet with a second pick. Freeze for about an hour and then enjoy! Try not to eat them all in one sitting. I dare you.

Failure

I ran out of room on my cookie sheet before all my berries were used up. Coincidentally, I ran out of patience for the poking and dunking around the same time. I still had a few berries and a bunch of coconut goop leftover (just under half). I ate the berries and attempted to turn the goop into something else. I failed. Such things happen. Although when I fed the coconut-lime-experiment-gone-wrong-muffins to Mr. Monster, he exclaimed, "Mmmm, tasty!" I swear, he'll eat anything...
